Ingredients:
- 3 cups water
- 3 cups sweet potato (peeled and diced)
- 1/4 cup fresh ginger (cut and peeled)
- 2 tbsp. sugar
- 3/4 tsp. salt
Preparation:
In a large saucepan, add a water and bring it to a boil. Add all the ingredients and cover the saucepan. Reduce heat and simmer for 30 minutes. Place half of the sweet potato mixture in a blender and blend until smooth. Return the pureed mixture to saucepan and cook over medium heat until thoroughly heated.
