1. Cupcakes with Nutella and Nuts
Ingredients:
- 50gr butter
- 100gr ground nuts
- 300gr flour
- 1 tsp. baking powder
- 50gr cocoa powder
- 100gr sugar
- 200gr Nutella
- 1 egg
- 150gr sour cream
- Vanilla extract
- ½ cup of milk
Preparation:
Mix the cocoa powder, sugar, nuts, salt and flour. Melt the butter and let it cool a bit. In another bowl, mix the melted butter with Nutella, sour cream, egg, milk and vanilla. Add the wet mixture into the dry one and whisk until everything is combined. Fill the molds and bake 20-25 minutes at 180ºC. Garnish your muffins with nuts, 10 minutes before taking them out from the oven.
2. Tiramisu Cupcakes
Ingredients:
- ½ cup flour
- 100gr butter
- 160gr sugar
- 2 eggs
- A dash of salt
- 1 ½ tsp. baking powder
- 200 ml milk
- 2gr vanilla extract
For the topping:
- 250gr Mascarpone
- 150gr of heavy cream (33-35%)
- 5 tbsp. powdered sugar
2gr of vanilla - 2 tbsp. cocoa powder
For the syrup:
- Fresh brewed coffee
- 2 tbsp. rum
Preparation:
In a big bowl, whisk sugar, butter, vanilla and salt. Start adding the eggs one by one and then add the milk, flour and baking powder. Whisk until everything is combined. Fill your mold and bake for 15 minutes.
Brew some coffee while the cakes are baking. Once the coffee is cooled, add the rum. When the cakes are done, grab a toothpick and make 10 holes in them. Moist the cupcakes with the coffee and rum mixture.
To make the topping, mix the Mascarpone. In another bowl, mix powdered sugar, cream and vanilla. Whisk everything. Mix the whisked cheese with the cream mixture. Put the mixture in a piping bag and top the cakes. Garnish with some cocoa powder.
3. Blueberry Muffins with Cheese Topping
Ingredients:
- 300gr flour
- 2 tsp. baking powder
- ¼ tsp. salt
- 150gr butter
- 200gr sugar
- 3 large eggs
- 2 tsp. vanilla sugar
- 50 ml seed oil
- 2 cups of fresh blueberries for the batter and 1 cup for garnishing
For the topping:
- 2 packs Philadelphia cream cheese
- 300gr butter
- 250gr powdered sugar
- 2 tsp. vanilla sugar
Preparation:
Coat your previously washed and dried blueberries with 1 tbsp flour. In a bowl, mix the flour, salt and baking powder. In another bowl, put the butter and whisk it with a mixer on high mode. Add the eggs one by one and keep on whisking. Add the vanilla. Turn your mixed to lowest mode and add 1/3 of the flour mixture. Add ½ of the seed oil and whisk. Add the remaining flour and oil and whisk. Add the blueberries and mix everything with a spatula. Fill the molds and bake for 20-25 minutes. Once they’re done baking, take them out of the molds and let them cool for 1 hour.
Whisk the granulated sugar, vanilla and butter. In another bowl, whisk the cream cheese. Mix the cream cheese and butter cream with a spatula until you get a nice and smooth cream. Garnish with the cream and some blueberries.
