Green Pea Salad
Ingredients:
- 1 cup fresh or canned pea
- ½ cup chopped leaks
- some shredded lemon crust
- 1 tbsp. freshly squeezed lemon juice
- some salt
Preparation:
If you’re using fresh peas, soak it in water and leave it a couple of hours until it softens. In medium-size salad bowl, add the fresh or canned peas, chopped leaks, lemon crust and lemon juice. Mix the salad and add some salt.
Chickpea Salad
Ingredients:
- 1 cup chickpea
- juice from 1 squeezed lemon
- olive oil
- salt
Preparation:
In a pot, put the chickpea, add some water and cook until the chickpea gets soft. In a bowl, add the cooked chickpea, lemon juice, olive oil and some salt. Mix the sad and enjoy!
3. Panzanella Salad
Ingredients:
- 1 cup chopped cherry tomatoes
- 2-3 chopped peppers
- 1-2 chopped cucumbers
- 1-2 slices whole wheat bread
- olive oil
- ½ tbsp. ginger
Preparation:
In a bid salad bowl, add the cherry tomatoes, chopped peppers, chopped cucumbers and chopped whole wheat bread. Mix the all ingredients, add some olive oil and some salt.
Avocado and Purple Onion Salad
Ingredients:
- 1 avocado
- 1 big purple onion
- olive oil
- 1 tbsp. lemon juice
- 1 tbsp. lime juice
- Some salt
Preparation:
Chop the avocado and the purple onion. Put the avocado and onion in a bowl, add some olive oil, lemon juice, lime juice and some salt and enjoy!
