Our sweet potato muffins are super healthy because they don’t contain inflammatory ingredients such as refined sugars, trans fats and processed grains. These muffins are very nutritious and a great source of vitamins, minerals and antioxidants. Sweet potatoes are not only delicious, but also packed with vitamin A, B5, B6, thiamin, niacin and riboflavin.
Here’s what you need to prepare the delicious anti-inflammatory muffins:
- 1 roasted small organic sweet potato
- ¾ cup organic coconut milk
- 2 tbsp. organic olive oil
- 3 tbsp. ground flaxseed in ½ cup of water
- 1 cup organic brown rice flour
- ¼ cup organic coconut flour
- ½ cup pure maple syrup or unpasteurized honey
- 1 tbsp. baking powder
- ½ tsp. Himalayan salt
- ⅛ tsp. ground nutmeg
- 1 tsp. ground turmeric
- ⅛ tsp. ground cloves
- 1 tbsp. Ground cinnamon
- 1 tsp. ground ginger
Preparation:
Preheat your oven to 400F. Use a skewer to make several holes in the sweet potato and place it on a baking tray. Cook the potato for 60 minutes. Once the potato is cooled, cut it in half and scoop out the insides. Place the inside in a large bowl. Add the coconut oil, flaxseed, maple syrup and olive oil. In another bowl, mix the dry ingredients and then mix everything together.
Grease your muffin tray with some coconut oil, pour the batter and cook for 30 minutes. Enjoy!
