The secret of these thin crispy potato chips is a mandoline. This tool slices produce into wafer-thin strips that fry into crunchy chips.
Ingredients:
- 3 medium potatoes (unpeeled)
- 1 pinch salt
- Vegetable oil
- Black pepper
Instructions:
Slice the potatoes into thin rounds using a mandoline with a straight blade. Place the sliced potatoes in a bowl. Season with a pinch of salt, toss to coat, and let them sit for 5 to 10 minutes. Place potatoes on a clean kitchen towel and pat dry.
Add 1 inch of vegetable oil in a deep skillet over medium-high heat. Fry potatoes until pale golden brown, making sure not to overcrowd the pan. Drain on paper towels. Season with some salt and pepper.
