Cucumber, Red Onion and Dill Salad
Ingredients:
- ¼ cup white wine vinegar
- 1 packet Stevia or 2 tbsp. sugar
- ¼ tbsp. sea salt
- 2 peeled and sliced cucumbers
- ½ thinly sliced red onion
- 2 tbsp. chopped fresh dill
Preparation:
In a big bowl, mix the salt, sweetener and vinegar. Add the onions, cucumbers and the fresh dill. Let it sit for 30 minutes and enjoy!
Cucumber and Chickpea Salad
Ingredients:
- 3 tbsp. olive oil
- 1 can drained beans
- ½ cup chopped tomato
- ¼ cup minced red onion
- 1 sliced celery
- 1 sliced cucumber
- 1 tbsp. minced garlic
- 2 tbsp. chopped, fresh dill
- 1 ½ tbsp. red wine vinegar
- ½ squeezed lemon juice
- ½ squeezed lime juice
- 1 tbsp. chopped fresh parsley
- salt and pepper
Preparation:
Put a pan on medium heat and add 2 tbsp oil. Add the beans in the pan and turn off the heat. Put all other ingredients in a large bowl and add the beans. Add some parsley on top!
Cucumber Greek Salad
Ingredients:
- 4 large peeled and sliced cucumbers
- 4 tbsp. plain Greek yogurt
- 1 tbsp. dill
- 1 tbsp. vinegar
- ½ tbsp. sugar
- ½ tbsp. salt
- ¼ tbsp. black pepper
- ¼ tbsp. garlic powder
Preparation:
In a bowl mix the yogurt, sugar, salt, vinegar, dill, pepper and garlic powder. Add the cucumber and mix everything well. Add some salt and pepper if you want.
