Ingredients:
- Chicken pieces
- 1 teaspoon paprika
- 1 cup buttermilk
- Salt
- Pepper
- 1 cup all-purpose flour
- 2 eggs
- 2 teaspoon garlic powder
- 2 teaspoon cayenne
- Vegetable cooking oil
Preparation
- Put buttermilk in a shallow dish and then place the chicken pieces inside. Ensure that all pieces are completely submerged. Cover the dish and chill preferably overnight. This allows the brine to soak into the meat.
- Remove chicken pieces and pat dry.
- Take the flour and put it in a plastic bag. Season it with salt, garlic powder, pepper, paprika, and cayenne. Shake the plastic bag to mix well.
- Add 1 cup water to a mixing bowl. Break eggs and add yolk only to the water.
- Add 1 tablespoon cooking oil and stir. Slowly add your seasoned flour to the mixing bowl while stirring. The mixture should be like a paste when done.
- Dip every piece inside the batter. Ensure each piece is evenly coated and doesn’t have excess batter by letting them sit on paper towels for 3 to 5 minutes.
- Add vegetable cooking oil to your skillet until its 1/3 to full. Heat the oil to a temperature of 325 degrees.
- Place chicken pieces in skillet. Add as many pieces as the skillet can hold.
- Cover the skillet with a lid. If your skillet doesn’t have a lid, aluminum foil can do the trick. Cook without turning the chicken pieces for about 6 minutes.
- Remove the lid and cook for 9 minutes. Turn the chicken pieces and cover the skillet. Cook for 6 minutes before removing lid and cooking for an additional 6 to 9 minutes.
- Lower the heat and continue turning the chicken pieces for an additional 3 to 5 minutes. This ensures even browning.
- Once cooked, remove chicken from oil and place on paper towels to drain. When completely cooked, the chicken’s juices should run clear when you slice through the meat.
As you can see, it’s a pretty straightforward recipe which you can easily prepare at home. Besides, the ingredients, the cookware you use will determine whether the chicken pieces come out perfect. My recommendation is that you use one of the best non stick skillets available today. They’re designed to evenly distribute heat makes cooking easier and fast. Also, they’re easy to clean up after you’re done cooking your chicken.
I’d also recommend investing in lidded skillets. Lids make it easy to trap in heat while cooking. This will make cooking faster and, ensure that your chicken pieces are evenly cooked.
