Ingredients:
- Flatbreads or pitas
- Marinara sauce (basil pesto or garlic scape pesto)
- 1 garlic
- Green bell peppers
- Mushrooms
- Favorite veggies (red onions; broccoli)
- Some red chili peppers
Preparation:
Preheat the oven to 425 degrees. Lay your flatbreads or pitas on a sheet pan and apply the marinara sauce (basil pesto or garlic pesto or both mixed). Cook some minced garlic, green bell peppers, and some mushrooms in a little olive oil for 3 minutes. Add the veggies on the top and spice it with chili peppers.
Veggie White Pizzas

Ingredients:
- 1 eggplant – sliced into ½ inch rounds
- 2 portabello mushroom caps (remove stems and ribs)
- Olive oil spray
Ricotta Mixture:
- ¾ cup organic Ricotta cheese
- 1 tbsp. organic Parmesan cheese
- ½ lemon
- 1 tsp. olive oil
- ⅛ tsp. garlic powder
Topping:
- ½ cup organic Mozzarella
- Broccoli
- Fresh juice of lemon
- Salt and pepper, to taste
Preparation:
Preheat the oven to 400 degrees. Spray the eggplant and mushrooms with oil. Bake at 400 until tender, about 5 minutes. Mix the ricotta mixture ingredients together, set aside. Boil the broccoli, then drain them well. Add the lemon juice and season with salt and pepper. When the eggplants and mushrooms get tender, top with ricotta mixture and mozzarella. Put them in the oven again until cheese is melted. Serve with broccoli and enjoy!
Mango – Basil Tortilla Pizzas

Ingredients:
- 4 small tortillas
- 1/2 cup tomato sauce
- 1 cup shredded cheese
- 1/3 cup diced
- 2 tbsp chopped basil (dried or fresh)
- Salt, black pepper, red pepper, oregano; optional and to taste
Preparation:
Preheat oven to 425 degrees. Place tortillas on a sheet pan and spread about 2 tablespoons of sauce on each tortilla. Then sprinkle about 1/4 cup of cheese per tortilla. Add the diced mango equally. Sprinkle each tortilla with chopped basil, and optionally season with any remaining seasonings, to taste. Bake them for about 10 minutes until cheese is melted and edges of the tortillas begin to brown. Serve the mini pizzas immediately, they are more delicious warm and fresh.
