Oatmeal Raisin Cookies
Ingredients:
- ½ cup raisins
- 2 cups rolled oats
- ½ cup white flour
- 2 tbsp powdered stevia
- ½ tbsp salt
- 1 tbsp baking powder
- 1 tbsp cinnamon
- ¼ tbsp nutmeg
- 1 egg
- 1 tbsp vanilla extract
- ¼ cup melted butter
- ¼cup melted coconut oil
- ¼ cup sugar free chocolate chips
Preparation:
Put the raisins into a small bowl and cover them with water. Let them soak for 10 minutes. Drain the water, leaving only 2 tbsp of water. Mix the rolled oats, flour, stevia, salt, baking powder, cinnamon, and nutmeg in a big bowl. Mix your egg with vanilla, melted butter, coconut oil and 2 tbsp of raisin water in a smaller bowl. Mix the wet ingredients with your dry ingredients. Add raisins and chocolate chips. Make 24 oatmeal balls with a spoon. Place them on a nonstick sheet. Flatten them a little. Bake about 15- 18 minutes until they’re golden brown.
Butter Cookies with Dried Cranberries
Ingredients:
- 2/3 cup macadamia nuts
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 tbsp vanilla extract
- 1 egg
- 1 ¼cups flour
- ½ tbsp baking soda
- ¼ tsp salt
- 1/8 tbsp ground nutmeg
- ½ cup sweetened chopped dried cranberries
- 1 tbsp granulated sugar
Preparations:
Put the nuts in a food processor and process them until they’re smooth. Mix the macadamia butter, ½ cup granulated sugar, and brown sugar in a large bowl. Add vanilla and egg and mix everything well. Mix the flour, baking soda, salt, and ground nutmeg with a whisk. Add the flour mixture to the sugar mixture. Add and mix the chopped cranberries. Chill for 10 minutes. Make 30 little balls from the dough. Put 1 tablespoon of granulated sugar in a small bowl and the slowly press each ball into the sugar. Put each ball, sugar side up, on a baking sheet. Bake the cookies until they’re golden.
No Bake Coconut Cookies
Ingredients:
- 3 cups shredded and unsweetened coconut
- 6 tbsp coconut oil
- 1/2 cup sweetener
- 2 tsp vanilla
- 3/8 tbsp salt
For topping:
- Melted chocolate chips, for drizzle
- Coconut shreds
- Chopped nuts
Preparation:
Put all ingredients in a blender. Blend until you get an even mixture. Remove the mixture from the blender form into the desired shape. Decorate your cookies with shredded coconut, cocoa powder, crushed nuts, or melted chocolate. Leave them in a freezer to cool and then enjoy this delicious dessert.
