Crab and Avocado Salad
Ingredients:
- 1 avocado
- 4 oz. crab meat
- 2 tbsp. chopped purple onion
- Juice from 1 lime
- 1 tbsp. chopped cilantro
- 1 tbsp. olive oil
- Salt and pepper
Preparation:
Chop the avocado and the crab meat. Put them in a big bowl. Add the chopped onion, chopped cilantro and juice from one lime. Drizzle with 1 tbsp. olive oil and salt and pepper.
Crab Salad with Cucumber and Tomatoes
Ingredients:
- 16 oz. crab meat
- 1 cucumber
- 2 diced tomatoes
- ¼ cup chopped green onions
- 3 pressed garlic cloves
- ½ cup low fat mayonnaise
Chop the crab meat and the cucumber into bite size pieces. Put all ingredients in a huge bowl and mix them good. Top your salad with ½ cup of low fat mayonnaise.
Crab, Tomato and Corn Salad
Ingredients:
- 12 oz. crab meat
- 2 cups grape tomatoes
- 1 diced avocado
- 2 hot peppers
- 1 ½ cups roasted corn kernels
- 1/3 cup chopped purple onion
- Juice from 2 limes
- 1 tbsp. olive oil
- 2 tbsp. chopped cilantro
- Salt and pepper
Preparation:
Slice the hot peppers into bite size pieces and the grape tomatoes on half. Put them in a bog bowl and add the crab meat, the diced avocado, corn kernels. Make a dressing from the lime juice, olive oil and chopped cilantro. Put your dressing over your salad and add some salt and pepper.
