Everybody enjoys a nice dessert but we’re hesitant to eat it when we’re on a diet and want to lose some weight. Well, now it’s time to relax, since we have found a way to enjoy healthy desserts and not worry about gaining weight. These desserts are healthy and low in fat, and not to forget, they are extremely DELICIOUS.
Peach and Basil Cake
Ingredients:
For the Cake:
- 2 and ¼ cups flour
- ½ cup divided sugar
- 1 tbsp baking powder
- ½ tbsp baking soda
- ¼ tbsp salt
- 6 tbsp butter cut into small pieces
- 1 cup buttermilk, low fat
- Cooking spray
- 1 and ½ tbsp fat-free milk
- ¼ cup almonds, slivered
- ¾ cup nonfat Greek yogurt
For The Topping:
- 4 cups sliced and peeled peaches
- 1/3 cup sugar
- 1/3 cup basil leaves
- 1 and ½ tbsp fresh lemon juice
Preparation:
First you need to prepare your topping-combine peaches, 1/3 cup sugar, basil, and the lemon juice in a bowl and let it stand 1 hour. Preheat the oven on 400°. Now, start making the cake. Combine flour, 7 tablespoons sugar, baking powder, baking soda, and salt in a big bowl and stir everything. Cut in butter until the mixture resembles coarse meal. Add the buttermilk and stir gently with just until it combines. Spray your baking pan with some cooking spray and add the dough. Gently brush the dough with milk. Sprinkle with sugar and almonds. Bake for 23 minutes. After its baked let it cool and then remove the cake from the pan. Top your cake with 1/3 cup peach mixture and 1 tbsp yogurt.
Banana and Berry Sorbet
Ingredients:
- 2 cups frozen banana cut in pieces
- 2 cups frozen berries
- ½ cup squeezed orange juice
- 2 tbsp fresh lemon/lime juice
- 6 tbsp maple syrup
- ½ cup granola/chopped almonds
Preparation:
In a small pan over low heat, warm the orange juice with the maple syrup. Let it cool. Take out your blender, and put the banana, berries and the fresh lemon juice in it. Blend until it’s smooth. Add the mixture of orange juice and maple syrup and blend just a little. Take all the mixture out and put it in a freezer. Serve this in cute cups with a scoop. Drizzle some granola or chopped almonds on top and enjoy your sorbet.
Pumpkin Mousse
Ingredients:
- 1 container Marshmallow Crème or any crème you like
- 1 can pure pumpkin puree
- ¼ cup water
- 1 tbsp ground cinnamon
- ¼ tbsp freshly grated nutmeg
- 1/8 tbsp ground cloves
Preparation:
Put all ingredients in a pan over low heat and cook. Stir until the marshmallow crème is melted and the mousse becomes smooth. Take the pan away from the heat and let it cool. You can serve immediately or keep it in the freezer for an hour or two. Serve it in small serving bowls.
