Ingredients:
- 26 unpeeled garlic cloves
- 2 tbsp. olive oil
- 2 tbsp. organic butter (grass fed)
- ½ tsp. cayenne powder
- ½ cup fresh ginger
- 2 ¼ cups sliced onions
- 1 ½ tsp. chopped fresh thyme
- 26 peeled garlic cloves
- ½ cup coconut milk

Preheat your oven to 350F. In a small baking dish, put the 26 garlic cloves and add 2 tbsp. olive oil, some salt and put them in the oven. Cover your baking dish with some foil and bake the garlic until it turns golden-brown. After 45 minutes, take the dish out and place the cooked cloves (first release cloves by squeezing the garlic with your fingertips) in a small bowl.
Melt the butter in a saucepan on medium heat. Add the onions, ginger, thyme and cayenne powder and cook for 6 minutes. Add the roasted garlic and the other garlic cloves and cook for 3 minutes. Add the vegetable broth, cover the pan with a lid and boil on medium heat until the garlic gets tender. After the garlic is cooked, blend the soup until you get a puree. Return the pureed mixture into the saucepan, add the coconut milk, some salt and pepper and gently boil. Serve your soup, squeeze some lemon juice and enjoy!
