Ingredients:
- 3 cups all-purpose flour
- 2 tsp. baking powder
- 1 cup unsalted butter
- 2 cups granulated sugar
- 1 tsp. kosher salt
- 3 large eggs
- 2 tbsp. lemon zest
- ¼ cup lemon juice
- 1 tsp. vanilla extract
- 1 cup whole milk
- nonstick cooking spray, for greasing
Lemon Glaze:
- ½ cup granulated sugar
- ¼ cup lemon juice
Lemon Icing:
- 2 cups powdered sugar, sifted
- 3 tbsp. lemon juice
- 1 zested lemon
Preparation:
Preheat your oven to 350˚F. In a bowl, mix the flour and baking powder. In a big bowl, mix the butter, sugar and salt using an electric mixer. Mix until you get fluffy mixture. Add the eggs, one at a time while beating. Add the lemon zest, juice and vanilla extract and mix until everything is combined. Add ½ of the flour and keep on mixing. Add the rest of the flour, milk and beat until everything is mixed well.
Grease your bundt pan with butter and add the batter in it. Use a spoon to smooth the top. Place the pan in the oven and bake for 50 minutes.
Lemon Glaze
Mix the sugar and lemon juice in a small microwave-safe bowl. Microwave for 1 minute until the sugar is completely dissolved.
Lemon Icing
Sift the powdered sugar in a bowl and mix it with the lemon juice until everything is smooth.
After the cake is baked, let it cool for 10 minutes. Invert it onto a wire rack set and remove the bundt pan. Poke holes all over the cake with a skewer and then brush the cake with the lemon glaze. Let the cake cool completely and then pour the icing over the top. Let it drip to the sides. Sprinkle some lemon zest over the icing and let the mixing dry for 30 minutes. Slice and enjoy!
