Curried Egg Salad Sandwich
Ingredients:
- 2 chopped hard-cooked eggs
- 2 tbsp. plain Greek low-fat yogurt
- 2 tbsp. chopped red bell pepper
- ¼ tbsp. curry powder
- 1/8 tbsp. salt
- 1/8 tbsp. pepper
- 2 slices toasted rye bread
- ½ cup fresh spinach
Preparation:
Get a big bowl and put the eggs, bell peppers, yogurt, curry powder, salt and pepper in it. Mix well all ingredients. Put the spinach on your bread and add the egg salad on top. Enjoy your healthy sandwich!
Avocado and Egg Salad Sandwich
Ingredients:
- 2 chopped hard boiled eggs
- 2 chopped hard boiled egg whites
- 2 small pitted and peeled avocados,
- 1 tbsp. plain Greek yogurt
- 1 tbsp. fresh lemon juice
- 2 tbsp. chopped green onion
- ¼ tbsp. Dijon mustard
- Salt and pepper
- 2 slices of bread
Preparation:
In a large bowl, put the eggs, egg whites and avocados, lemon juice, yogurt, green onions and mustard. Mash all the ingredients together. Add some salt and pepper. Put some of the avocado egg salad between the slices of bread and Voila! You have a tasty and healthy sandwich!
Tomato, Egg Salad Sandwich
Ingredients:
- 2 chopped, hard boiled eggs
- a big chopped tomato
- ½ cup non-fat Greek yogurt
- 1 tbsp. fresh dill
- ¼ tbsp. onion powder
- 2 cups arugula
- Some salt and pepper
- 2 slices of toasted bread
Preparation:
In a large bowl, add the eggs, sliced tomato, Greek yogurt, the dill, onion powder and some salt and pepper. Mash the ingredients and mix them well. Once you get a nice mixture, put some of it on your slices of bread and some the arugula. Enjoy!
