It can’t be Christmas without gingerbread cookies!
We all love gingerbread cookies. They are perfect holiday desserts, easy to prepare, amazingly soft, and what’s important they are great for gifts. You can share these treats with friends, family and neighbors.
Gingerbread cookies recipe:
Ingredients:
- 3/4 c. (1 1/2 sticks) butter – softened
- 3/4 c. packed brown sugar
- 2/3 c. molasses
- 1 egg
- 1 tsp. pure vanilla extract
- 3 1/4 c. all-purpose flour
- 1 tbsp. ground ginger
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
For decorating:
- Sugar cookie icing
- Some sprinkles
Instructions:
In a large bowl, using a hand mixer mix the butter, brown sugar, and molasses until fluffy, and then add the egg and mix everything well, until combined.
In another bowl, whisk flour, spices, baking soda, and salt until well combined. Put the hand mixture on low and mix gradually. Add dry ingredients to wet ingredients until dough just comes together. Divide dough in half and create two discs. Wrap each in plastic wrap and let it cool until firm, for about 2 to 3 hours.
Preheat oven to 350° and line two large baking sheets with parchment paper. Place one disc of dough on a lightly floured surface and roll until 1/4″ thick. Cut out gingerbread men and put them on the baking sheets. Bake for about 10 minutes, or until slightly puffed and set aside. Let your cookies cool on baking sheets for 5 minutes before transferring to a cooling rack to cool completely.
Repeat with the other disc of dough. Decorate with icing and sprinkles of your choice.
