Banana Muffins
Ingredients:
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 4 large, over-ripe bananas
- ¼ cup nonfat milk
- 2 large egg whites
- 1 tbsp. canola oil
- 1 tsp. vanilla extract
Preparation:
Preheat your oven to 350 degrees. Coat your muffin pan with some cooking spray. In a big bowl, mix the sugar, flour, baking soda, baking powder and salt. Put the banana in your blender and blend until it’s mashed. Add the milk, oil, egg whites and vanilla extract and blend until everything is combined. Add the flour mixture and blend just a little until the two are combined. Use a spoon to [lace the batter into the muffin cups. Bake for 10-12 minutes.
Chocolate Banana Creamsicles
Ingredients:
- 3 large over-ripened bananas
- 1 cup coconut milk
- 4 tbsp cocoa powder
- 1 tsp vanilla extract
- a pinch of salt
- Dixie cups (fewer than 10 for this recipe)
- popsicle sticks
Preparation:
Put all ingredients in your blender and blend until everything is combined. Divide the mixture into your popsicle molds and put them in the freezer.
