Can’t decide whether you like waffles or chocolate cake more? You don’t have to because we have combined the two greatest desserts to make one extremely delicious dessert that will definitely satisfy your sweet tooth. The perfect mixture of chocolate and raspberries will make this dessert your favorite and you’ll always be back for more.
Here’s what you need to prepare the chocolate-raspberry waffle cake:
- One 16.25-ounce box chocolate cake mix + the ingredients for baking it
- 2 cups raspberries (freeze-dried)
- ¼ cup confectioners’ sugar, plus more for dusting
- ½ cup mascarpone cheese
- 1 tsp. pure vanilla extract
- 1 ½ cups heavy cream
- 6 ounces semisweet chocolate chips
- 1/2 cup fresh raspberries
Preparation:
Preheat your waffle maker. Prepare the boxed cake according to the instructions. Put 1/3 cup of the batter in the center of the waffle maker. Close the lid and let it cook. Once the cake is lightly browned, remove it from the waffle maker and set it aside to cool. Do the same with the remaining batter. Let all waffles completely cool. You’ll should have around 8 waffles.
Place the raspberries, confectioners sugar, heavy cream, mascarpone and vanilla extract in your blender and blend until you get a creamy and thick mixture.
Grab a medium bowl and place the chocolate chips in it. Heat the ½ heavy cream and then pour it over the chocolate. Stir until smooth and melted.
Place one waffle on a place or cake stand. Spread ¼ of the raspberry mixture over the waffle and drizzle 1 tbsp of the chocolate ganache. Repeat with the remaining waffles. Decorate your waffle cake with fresh raspberries and some ganache. Dust some confectioners sugar if you want.
