Here is how to prepare this long-forgotten molasses pie, which is extremely healthy.
Ingredients:
- 1 (9 inch) pie shell
- 1 cup molasses
- 3/4 cup hot water
- 3/4 tsp. baking soda
- 1 egg, beaten
- 1 1/2 cups all-purpose flour
- 1 cup packed brown sugar
- 1/4 cup shortening
Preparation:
Preheat oven to 400 degrees F (200 degrees C). To make the bottom layer, mix molasses, hot water and baking soda in a medium bowl and stir well. Then, whisk in the beaten egg. Pour the mixture into pie shell. To make the topping mix the flour and brown sugar and in a medium bowl and stir well. Then, cut in shortening until mixture resembles coarse crumbs. Sprinkle on top of the molasses layer.
Bake in preheated oven for about 15 minutes. Lower the temperature to 350 degrees F (175 degrees C) and bake more for 30 minutes.
